Chopped Quinoa Salad with Broccoli - healthy, vegetarian, gluten free

The heat is on, at least here in “Hotlanta”. Instead of spring weather, we have gone straight to muggy, humid summer weather. However there is a bright side to this weather. First off I do not want to turn the oven on. Second I do not want to eat a hot, heavy meal. What does that mean? Salads baby!

Since quinoa is naturally gluten free and has more protein than most other grains, it is a favorite of mine. Vigo Quinoa in particular is a staple in my pantry as it is pre-washed. In other words, it is not bitter. Yeah!

Did you know quinoa is actually a seed and people have been eating it for over 5000 years? That is a time tasted food. Quinoa is also versatile. Toss it in salads, soups or even replace your bowl of oatmeal with a bowl of quinoa for breakfast. It has a mild nutty flavor which will make your taste buds sing.

Notably Vigo extra virgin olive oil has a fruity and pungent taste with a slightly peppery finish. Furthermore, Vigo Extra Virgin Olive Oil has no saturated fat, cholesterol or additives. Thus making a light Italian flavored vinaigrette for this quinoa salad.

Quinoa Broccoli Chopped Salad

Serving size 1/2 cup

Servings 24 servings

  • 3 cups water
  • 1 ½ cups Vigo quinoa
  • 4 cups roughly chopped broccoli
  • 2 cups chopped carrot
  • 2 cup seedless grapes
  • ½ cup chopped shallot
  • 2 garlic cloves , minced
  • 3 tbsp apple cider vinegar
  • 3 tbsp . Vigo Extra Virgin Olive Oil
  • 1 ½ tsp Italian spice mix
  • 1 tsp . kosher salt
  • ¼ tsp fresh ground black pepper


  1. Bring water to boil in a small saucepan.
  2. Stir in quinoa. Cover and reduce to a simmer.
  3. Simmer for 12 to 15 minutes, or until quinoa is done.
  4. Set aside to cool.
  5. Place broccoli in a food processor and pulse until broccoli is very finely diced. Pour into a large bowl.
  6. Repeat with carrot, then grapes and finally shallots adding all to the bowl of broccoli.
  7. Add quinoa to bowl.
  8. In a small bowl whisk together garlic and vinegar.
  9. Whisk in olive oil and remaining ingredients.
  10. Pour over quinoa mixture.
  11. Refrigerate for an hour.

    I'm a huge fan of pasta, so the Vigo penne or the farfalle both look great. I'm trying to follow a Mediterranean diet, so I've been preparing a lot of pasta with veggies like sweet peas, carrots, celery & peppers.

    We love Vigo artichoke hearts! I have used them in pastas, rice and quinoa mixes, but my favorite is spinach artichoke pizza. My mama would not have a dinner party without a relish tray including the Vigo Giardinera garden mix and olives. I would turn my nose up at anything pickled or marinated back then, but now it's a staple on my table as well!
