Chocolate Covered Strawberry Cake

Chocolate Covered Strawberry Cake is a family favorite. Fresh strawberries flavor a moist tender cake filled with strawberry pudding and topped with chocolate ganache.

Chocolate Covered Strawberry Cake #fooddonelight #strawberrycake #lowcaloriecake #chocolateganacheChocolate Covered Strawberry Cake – I just love the name of it.  It makes me smile and eating it makes my smile even wider.  I have been working on lightening this cake for a while, well lightening the frosting really.  The cake itself was fairly low-fat to begin with and was actually a Paula Deen recipe.  The cake is from her Fresh Strawberry Cake recipe.  I have been making that cake with a strawberry cream cheese frosting for years.  My daughter has had the cake many times for her birthday.  It is beautifully moist and full of strawberry flavor but the cream cheese frosting was outrageously fattening.

Frosting, what a nightmare to try to lighten.  For a long time it really had the best of me.  Sure I thought about an Italian meringue or 7 minute frosting but they are so finicky.  It really wasn’t what I wanted for this cake.  Then I happened to think about a chocolate ganache.  A quick search on Cooking Light and I found a great recipe.  It worked perfectly. Now I had to think about the filing.  I thought about fresh strawberries or a strawberry pudding and then remembered that my Mom use to make a chocolate cream pie with Dream Whip in it.  I hadn’t used Dream Whip in years so why not.  I used the recipe on the back of the package and it worked well.  I would love to have had it set up a little more so that I could have packed in the filing.  Oh well!  You cannot have everything when you are trying to do low-calorie and low-fat.

I am tickled pink about this recipe!  I could have eaten the entire cake myself.  Luckily I have some nice neighbors that don’t mind being guinea pigs for me.  We had a cake and cocktail evening to enjoy some great conversation and cake.  The mojitos were mighty good too.  As for the leftover cake, I gave some to my parents and I slowly ate the rest.  Yes, I was a piglet.  There is no way I can keep this cake in the house.  I adore it!  So have a piece on Valentine’s then bring the leftovers to work.  Your co-workers will thank you.

    For the cake (Adapted from Paula Deen's Fresh Strawberry Cake):
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup light butter at room temperature
  • 1 1/3 cups sugar
  • 5 egg whites, room temperature
  • 2 tsp. strawberry extract
  • 1 tsp. vanilla extract
  • 2 cups pureed fresh strawberries*
  • 1/2 cup non-fat Greek Yogurt, room temperature (I used Fage)
  • 1 1/2 cups cake flour (170-180 grams as cake flour differs)
  • 1 1/2 cups (180 grams) whole wheat pastry flour
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. kosher salt
  • Whipped Strawberry Filing (From Dream Whip Package):
  • 3/4 cup non-fat milk
  • 1/2 envelop Dream Whip whipped topping mix
  • 1/2 package instant sugar-free white chocolate pudding mix (4 serving size)
  • Ganache(slightly adapted from cooking light chocolate ganache):
  • 1/2 cup sugar
  • 2 tbsp. unsweetened cocoa powder
  • 2 tbsp. unsweetened dark cocoa powder
  • 1/3 cup fat-free milk
  • 1 (4 oz) bar semi-sweet chocolate, chopped


    For cake:
  1. Preheat oven to 350°.
  2. Spray 2 (9 inch) cake pans with non-stick baking spray.
  3. In a bowl of a stand mixer, cream together butter, light butter and sugar until light and fluffy. Add egg whites on at a time, incorporating fully after each addition.
  4. With mixer on low, stir in strawberry puree, both extracts and yogurt. (Do not panic if mixture looks curdled, it will be fine)
  5. In a medium bowl, whisk together cake flour, pastry flour, baking powder, baking soda and salt.
  6. Gradually add dry ingredients to wet, beating until just combined.
  7. Turn mixer off and stir with a spatula to make sure everything is incorporated.
  8. Pour half the mixture into each cake pan. I weigh my pans with the mixture to make sure they are even.
  9. Bake for 30-35 minutes or until a toothpick inserted into the middle comes out clean.
  10. Place pans onto a wire rack and cool for 10 minutes.
  11. Turn cake out onto the wire rack and allow to cool completely.
  12. For filing:
  13. In the bowl of a stand mixer with a whisk attachment, combine all ingredients. Mix on low-speed until fully combined.
  14. Turn mixer to high and whisk for 4 to 6 minutes, until soft peaks form.
  15. Put filing into the refrigerator for at least an hour.
  16. For ganache (Wait until you are ready to put it on the cake before making it):
  17. In a medium saucepan, combine sugar, cocoa, dark cocoa and milk. Turn heat to medium and bring liquid to a boil, stirring frequently.
  18. Once at a boil, stir constantly and cook for 1 minute.
  19. Take saucepan off the heat and stir in chopped chocolate. Stir until the ganache is smooth.
  20. Cake Assembly:
  21. Even out the cakes if crooked and place one layer onto a plate.
  22. Spoon filing onto the cake; you may not need it all (Do not put other cake on top)
  23. Refrigerate the bottom layer for at least 30 minutes.
  24. Place the other cake on top.
  25. Spoon warm ganache over the cake. Use a spatula to push the chocolate over the sides and even out the top.
  26. Refrigerate again for at least 1 hour.


*To make the strawberry puree you will need approximately 24-36 oz of fresh strawberries. Hull the strawberries and place them in a food processor. Puree fully. There is no need to strain the puree. It is better without it.

      I know that was what I thought about the cake but her original cake wasn't bad. I just love Fage. I tried a lot of the other Greek Yogurt brands and did not like them. It is Fage for me!
