Chocolate Covered Strawberry Cake is a family favorite. Fresh strawberries flavor a moist tender cake filled with strawberry pudding and topped with chocolate ganache.
Chocolate Covered Strawberry Cake – I just love the name of it. It makes me smile and eating it makes my smile even wider. I have been working on lightening this cake for a while, well lightening the frosting really. The cake itself was fairly low-fat to begin with and was actually a Paula Deen recipe. The cake is from her Fresh Strawberry Cake recipe. I have been making that cake with a strawberry cream cheese frosting for years. My daughter has had the cake many times for her birthday. It is beautifully moist and full of strawberry flavor but the cream cheese frosting was outrageously fattening.
Frosting, what a nightmare to try to lighten. For a long time it really had the best of me. Sure I thought about an Italian meringue or 7 minute frosting but they are so finicky. It really wasn’t what I wanted for this cake. Then I happened to think about a chocolate ganache. A quick search on Cooking Light and I found a great recipe. It worked perfectly. Now I had to think about the filing. I thought about fresh strawberries or a strawberry pudding and then remembered that my Mom use to make a chocolate cream pie with Dream Whip in it. I hadn’t used Dream Whip in years so why not. I used the recipe on the back of the package and it worked well. I would love to have had it set up a little more so that I could have packed in the filing. Oh well! You cannot have everything when you are trying to do low-calorie and low-fat.
I am tickled pink about this recipe! I could have eaten the entire cake myself. Luckily I have some nice neighbors that don’t mind being guinea pigs for me. We had a cake and cocktail evening to enjoy some great conversation and cake. The mojitos were mighty good too. As for the leftover cake, I gave some to my parents and I slowly ate the rest. Yes, I was a piglet. There is no way I can keep this cake in the house. I adore it! So have a piece on Valentine’s then bring the leftovers to work. Your co-workers will thank you.
