I chose to do this recipe today because my daughter absolutely loved them. It seems just as this tragedy is wrapped around the loss of such young, innocent children, it is through our own children that we find the way to go on.  My little one is happily counting down the days until Christmas absolutely oblivious to the horror that we all have witnessed.  I am so grateful for that!  Her joy reminds me that we need to savor each minute and live life to the fullest.  I realized I needed to get over the guilt I felt for enjoying her and just ENJOY!  That is really the best way that I can honor the children and families of Sandy Hook.

This recipe did bring me joy!  I feel like I say this a lot but I use to have a serious dislike for Gingerbread.  There was always too much molasses in it for me.  I am not a molasses fan at all.  Last year I happened to try a sample of Gingerbread at Publix.  It was fantastic!  Wow!  My tastebuds told me to get more.  I have thought about that Gingerbread ever since and decided I would try it for myself.  I started looking at different recipes and came across one on Epicurious here.  It had less molasses than other recipes but still good flavor.  I knew I wanted to add something else to work in harmony with the molasses so I chose Mini Semi-Sweet Chocolate Chips. So with just a tweak or two of that recipe I had this one.

When I made them, I thought they would be a great adult type dessert for our Christmas party.  I thought my little one would take a bite and spit it out.  Instead she happily gobbled it up and asked for more.  She chose to eat these little cakes over other desserts including her favorite cheesecake.  They are that good!  They are also simple to make.  There is no need for a mixer.  You can make them small like I did or make an 8″ square cake.  Here is how:

Chocolate Gingerbread and Cookies & Crafts for Sandy Hook

  • Non-stick Baking Spray
  • 1 cup (120 grams) all-purpose, unbleached flour
  • 1/2 cup (60 grams) whole wheat pastry flour
  • 1 tsp. ground ginger
  • 3/4 tsp. ground cinnamon
  • 3/4 tsp. kosher salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup (1 stick) unsalted butter, cut into 10 slices
  • 1/2 cup boiling water
  • 1/2 cup (packed) light brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 2 tsp. grated, peeled, fresh ginger
  • 5 tbsp. mini semi-sweet chocolate chips


  1. Preheat oven to 350°.
  2. Coat 2 mini muffin tins or 2 tea cake tins with non-stick baking spray. Be sure to coat really well.
  3. In a medium bowl, whisk together the all purpose flour, whole wheat pastry flour, ground ginger, cinnamon, salt, baking powder and baking soda. Set aside.
  4. In a large bowl place the butter slices then pour over the hot water. Whisk until the butter has melted.
  5. Stir sugar, molasses, egg and ginger into the melted butter.
  6. Add the dry ingredients and mix well.
  7. Finally stir in the chocolate chips
  8. Pour about 1 tbsp batter into each mini cup.
  9. Bake for 15 to 20 minutes, or until a toothpick inserted into the middle comes out clean.
  10. Place pan on a wire rack and cool for 10 minutes.
  11. Remove cakes and place directly on the wire rack to cool completely.
