Sometimes it is easy to forget that Thanksgiving is about giving thanks and not the food. Teaching our daughter to be thankful and give back has been a priority this year. Since she was young, we would go to the store and she would pick out a toy. The toy was not for her, but to give to Toys for Tots. When we started this, she did not understand that there were some children that did not get presents. Now that she is a little older, that is starting to sink in. Of course, she asks why Santa would not bring them presents. That is a tricky question to answer. This year her Sunday school group collected food to deliver to a food bank. They were able to tour the food bank and sit down with one of the administrators to talk about people who food is scarce for. At the age of 9, this is a concept she still does not fully understand. They also made up bags of food to be delivered. This seems to have the biggest impact on her, seeing how a little food could make a big impact on someone’s life. We really need to do more of these activities so she understands better, and learns that part of life is giving back.

The other part we try to work on with her is being grateful. She is an only child and an only grandchild on my side. Oh yes, spoiled! I won’t call her “spoiled rotten”, because she is a very good girl. We have been having an ongoing conversation about being grateful for what she has and not continually asking for something new. That is a lesson even I need a refresher on sometimes. When something goes bad, it is so easy to be caught up in the moment and feel a little self-pity. Those are the times I remind myself that I am one lucky lady. My husband had a heart attack a few years ago, but is luckily still with us. Life was pretty painful getting to this point, but we seem to have come through the other side. Things do go wrong in our life, but I try to remember they always seem to work out in the end. It may be very painful getting to that point, but with a little faith we will get there.

Everyday I am exceedingly grateful for the health of my family. My daughter does not understand how lucky she is to have 2 great-grandmothers and a great-grandfather alive. Seeing their close relationship is so rewarding. We are very lucky to have this time together. My Mom’s parents always come for Thanksgiving. Over the holiday, we all go and cut down our Christmas tree. I treasure each year, because we never know if there will be another. What are you thankful for this Thanksgiving?

Chocolate Gingerbread Blondies #SundaySupper

Ingredients

  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (60g) whole wheat flour
  • 1 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 2/3 cup light brown sugar
  • 5 tbsp. unsalted butter, softened
  • 4 tbsp. yogurt cream cheese, softened
  • 2 large eggs, lightly beaten
  • 2 tbsp. molasses
  • 1 tsp. vanilla extract
  • 1/2 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350•. Spray an 8 x 8 inch baking pan with non-stick cooking spray.
  2. In a medium bowl, whisk together first 7 ingredients.
  3. Using a stand mixer, beat the sugar, butter and cream cheese together until light and fluffy.
  4. Beat in the eggs one at a time.
  5. Beat in the molasses and vanilla.
  6. Stir in the flour mixture until just combined.
  7. Spread the batter into the pan. Sprinkle with chocolate chips.
  8. Bake for 22 to 30 minutes, or until a toothpick inserted in the middle comes out clean.
  9. Place pan on a wire rack and cool completely.

      I don't know Laura. I haven't used dairy free butter or cream cheese. I am guessing if you have a dairy free butter and cream cheese you like, they should work fine. I would love to hear if you try it. Christie

        Sorry to say I really did not like these. The recipe called for cottage cheese but that was not in the ingredient list. I was planning on giving these as gifts but will not be doing that.

  13. I was in the process of making your chocolate gingerbread brownies. The ingredients do not have cottage cheese. So I omitted it. Was there something I have missed.
