Chilled Asparagus Pea Soup is the perfect way to celebrate Spring. This cool and refreshing soup is perfect for lunch or dinner.
Chilled soups always seem so luxurious to me, so gourmet. I’m not really sure why since they are so incredibly easy to make. I never really had a lot of chilled soups growing up but discovered a love of them while on a cruise. Each night was a different chilled soup, some with vegetables, some with fruit and some with both. Maybe because I associate chilled soups with vacations, they feel so decadent to me. As soon as asparagus came into season I knew I was going to make soup. The fresh English peas were calling to me so I threw them in to. It made the most scrumptious soup, Chilled Asparagus Pea Soup was born.
It is no wonder I thought about a chilled soup. We have booked a cruise for the summer. I cannot wait. I feel like a little kid wishing everyday was the day we go. After all the stress we have had and continue to have with my husband’s heart, some rest and relaxation is on order. Before our child, we had been on many cruises. We didn’t really care where we cruised to; we just loved being on a ship and being totally spoiled for a week. A few years ago we took our daughter on one. She took to it like a fish in water. This time we are keeping it a surprise and will probably tell her the week before we go. She is going to be so excited. She already has the travel bug and is quite the world traveler. When she was 3-year-old, we went to India for my brother-in-law’s wedding. Last year we took her to Singapore to see her paternal grandparents. Thank goodness we had a lot of airline miles we could cash in for the tickets.
I was wondering if my daughter and hubby would like this soup. My hubby hates peas, with a capital H. He is Ok with fresh peas so I thought I would give it a whirl. My daughter is picky about veggies now. I was very happy to see that both of them devoured the soup. It tastes so fresh and light. It will make a perfect al fresco dinner with a sandwich or salad. It would also be perfect for Mother’s Day. The asparagus and peas blend so well together and all the flavors marry to make a perfectly balanced soup. It is like a bit of Spring in every bite. Give the soup a whirl. I bet your family will love it too.
