A quick and easy dinner is only moments away. Chicken Sliders with Peach Chutney will make a delicious weeknight dinner.
My first foray into chutneys was from a cooking light recipe for an apricot chutney. They called it a chutney although it was really more of a sauce but it was enough to make me confident I could make my own. We love to eat these sliders in the summer. It is a quick, easy weeknight meal that my daughter will devour.
I love to make these slider sandwiches for two reasons: 1. It is easier to watch my portion size and often I can have two which makes me think I am eating more. 2. We call small foods “Lyla size” so my little one thinks they are especially for her and is happy to eat them. I am also slightly obsessed with small or bite size food so this just adds to my obsession.
Just a note on the calories for this recipe. The nutritional value is only for the chicken andpeach chutney. It does NOT include the rolls. Why? Rolls come in so many different sizes and types. I don’t know which kind or size you will choose so you have the option of adding the roll you want based on your own caloric needs.

Ingredients
- 1 lb. boneless, skinless chicken thighs
- 1/2 tsp. kosher salt
- ground black pepper
- 4 tbsp. peach chutney
- 8 slider size rolls
Instructions
- Heat a grill pan or grill on medium high heat.
- Dry both sides of chicken thighs with a paper towel then sprinkle both sides with salt and pepper.
- Place chicken in pan or on the grill for 5 minutes without turning. Turn over the chicken and cook for another 5 minutes or until chicken is done. The internal temperature should be 165°.
- Place about 2 ounces chicken on each roll and top with 1/2 tbsp. peach chutney.
