Peach BBQ Sauce has been on heavy rotation in our house. We have been slathering it on ribs, pork chops and these Chicken Skewers with Red Pepper. We even threw it on some BBQ nachos one night. I have to admit this dish came about because of an adorable skewer set I bought, rather than the BBQ sauce. In fact I had to make a recipe, so I could use them. We have tried so many different skewers, wood, metal, circular, flavored and probably a few more. I bought this set because the skewers hung on this cute metal frame. Silly I know but sometimes it is fun to be a little whimsical.
In the end, it didn’t matter what we put these chicken skewers on. You have to take the food off the skewer to eat it, and it was taste that won out in the end. My little one helped me skewer the chicken, red peppers and onions earlier in the day. We kept the chicken skewers in the fridge until dinner time. Then it was a matter of brushing on this luscious peach BBQ sauce and grilling them for a few minutes. It made for a really quick dinner, which is a very good thing, because it takes me forever to photograph food.
So if you are planning on having a Labor Day party, put the chicken skewers together in the morning. Have the peach BBQ sauce ready too. Then you can throw them on the grill when your guests arrive. This healthy dish will be a crowd pleasure. Oh! I like to serve a little peach BBQ sauce on the side for dipping. I can’t get enough of it.

Chicken and Red Pepper Skewers with Peach BBQ Sauce
- 1 lb. boneless skinless chicken breasts, cut into 1 inch pieces (should have about 16 pieces)
- 1 ½ red peppers cut into 1 inch pieces (about 16 to 20 pieces)
- ½ small onion cut into 1 inch pieces, layers separated (about 16 pieces)
- ¾ tsp. kosher salt
- ¼ tsp. fresh ground black pepper
- 2/3 cup Peach BBQ Sauce
Preheat grill to 375°. Oil or spray grates well.
If using wooden skewers, soak them in water for 30 minutes.
Thread a piece of chicken onto a skewer followed by a piece of red pepper and then a piece of onion. Repeat until skewers are filled.
Place skewers onto a cutting board and sprinkle all sides with salt and pepper.
Brush skewers with some of the peach BBQ Sauce.
Place onto the grill and cook for 3 to 4 minutes per side. Baste kabobs with BBQ as you are cooking. Chicken should have an internal temperature of 165°.
Take kabobs off grill and let them sit for 5 minutes before serving.
Serve with additional BBQ sauce, if wanted.
