Pizza time! Turn on your oven, your De’Longhi Livenza oven that is. It is still too hot here in Georgia to turn on my big oven and add more heat to the house. Instead, I like to heat up my counter top Livenza oven. Did you know you can even cook a pizza in it? Woo hoo. Plus the De’Longhi Livenza oven comes with a pizza pan! You are all set. This Ranch Chicken Pizza, is a recipe I haven’t made in years. It is a recipe that reminds me of a difficult time in my life. After the birth of our child, I was diagnosed with postpartum depression. Luckily for me I had a family that figured it out quickly, and I got help immediately.
Even now looking back at that time puts a knot in my stomach. I know PPD wasn’t my fault. Additionally, I know it was caused by my hormones. Futhermore, I know it was absolutely, positively no reflection of my love for my child or my mothering skills. Even though I rationally know all of that, I still struggle with the guilt. I did not have the type of PPD where I wanted to hurt myself or my child. In fact, I could not stand to be apart from her. I could not sleep, at all. Nor I could not relax, I could not tune out any of the littlest noises she made. Frequently I would cry, and I hate to cry. So when I say I am not a crier, I mean I hate to cry even during sad movies.
Eventually with the help of a therapist and medication, I got back on my feet. I had always worked until that point and needed to find a way to meet other stay at home Mom’s so I joined a Mommy’s group. One of the fun events was a night out at a local Super Suppers. Do you remember those? That was where you would go and put food together. They would have everything prepped for you, and you would put it all together into a freezer safe container. This particular one had a “Ladies Night Out” along with Sangria and fancy appetizers.
Ranch Chicken Pizza was one of the recipes we most enjoyed! Ahh, there was a point to my story. Sadly the store went out of business, but the owner gave me a few of the recipes we most enjoyed including this one for Ranch Chicken Pizza. My daughter is now almost 10 years old! How did that happen? While PPD is well in my past, thinking of her as a baby always reminds me. I think I have found some amount of peace with it and know how important it is to talk about it. So many women go undiagnosed or untreated. There is no shame in having PPD.
Even if you don’t have PPD, having a baby is hard. The lack of sleep will bring you to the edge. That is why it is so important to have your freezer stocked and time-saving kitchen products like the De’Longhi Livenza Oven at the ready. I find mine preheats much quicker than my oven. Plus it does not heat up the entire house. It has double glass doors and advanced insulation so the heat stays inside while the outside keeps cool. You don’t have to worry about little fingers touching the door. When you are only getting an hour or so of sleep in between feedings, shaving off five minutes of meal cooking is indispensable.
Plus this oven has an auto shutoff. So if you happen to be changing a diaper or upstairs when the dish is done, it will simply turn off. You don’t have to worry about your dinner burning. Plus it has my all-time favorite feature of an oven, convection cooking. I always cook on convection. My roasted vegetables are crisper, and cookies bake more evenly and quicker. Convection ovens circulate the hot air so you don’t end up with one burnt cookie and one raw cookies. You can even broil and grill. The defrosting function is another dinner saver.
I cannot be the only person who has forgotten to take out something for dinner. Tell me I am not, please! Even more cool, there is a function to bake frozen cookies. What? Yes you can tell the oven whether you are baking fresh or frozen cookies. Just think of the freshly baked cookies whenever you want. You can cook just a couple to keep with that so important portion control.
There is also a special function for pizzas. The Livenza oven automatically sets your temperature. You can adjust the cooking time to suit your preference. A 6 to 13″ pizza will fit, plus you can tell the oven whether it is thin, regular or deep dish crust. I just love that. It is the perfect place to make this Ranch Chicken Pizza. Ranch Chicken Pizza (Healthy, Low Calorie, Low Fat)
- 1 pizza dough
- ½ cup reduced fat Ranch dressing
- 1 ½ cups shredded part-skim mozzarella cheese
- 1 cup diced cooked chicken breast
- ½ cup canned artichoke quarters
- ¼ cup sun-dried tomatoes not in oil, chopped
- ½ tsp. Italian seasoning
- 1 tbsp. grated Parmesan cheese
Preheat oven to 425•.
Roll pizza dough out to a 12-inch circle. Place on rimless baking sheet.
Evenly spoon on ranch dressing leaving an inch border on the outside.
Top with remaining ingredients.
Bake for 8 to 12 minutes, or until cheese has melted and crust is golden brown.
