The last few times I have been in the grocery store, I feel like the pomegranate arils (seeds) have been taunting me. Screaming at me – Buy us – Look how pretty we are – Don’t we sparkle – Vibrant red beauties here – look all the work has been done Even though the arils were in their own little package already taken out of their skin, I passed them up a few times because they are not quite in season. After all, I told myself “I am trying to be more patient and enjoy what is in season at the moment”. Alas, they wore me down.

Sigh! They really are beautiful.  I am so glad they wore me down.  The arils turned a simple chicken dinner into a beautiful and delicious symphony of flavors.

While my daughter was not overly enthralled with the pomegranate seeds, she happily gobbled up the chicken she called “Orange Juice Chicken”.  She is not normally a chicken fan.  I wish I had figured out earlier I just needed to marinate chicken in orange juice and she would ask for seconds.  I was actually going for more of a mojo marinade but she doesn’t need to know that.  It can be our little secret.

This dish is like a little splash of summer which is somewhat confounding given neither oranges nor pomegranates are in season.  It was, however, refreshing and light.  Both qualities I find highly satisfying in the hot days of summer.  It was also quick to prepare and involved very little cooking.  Another plus for an end of summer weeknight meal.

This dish is not all about the pomegranate, however.  They are more of a supporting character to the lead, the chicken.  Paillard is just a fancy French word for meat that has been pounded thinly and cooked quickly.  I cut the chicken in half to make it a little easier to pound out.  Then get your aggressions out and pound away until the chicken is about 1/4 inch thick.  This little bit of prep work makes the chicken a super quick cooking meal.

The marinade is also quick to whip together.  I put it all in a zip lock bag and swished it all together.  Swished, of course, being a technical term for stir.  I have this handy little bag holder called a Jokari Baggy Rack which holds the bag open so I can drop all the ingredients in.  Love it.  Anyway, as I stated above, the marinade is mojo inspired.  Since I cannot find sour oranges, I used a mix of orange and lime juice.  It gives the chicken a nice citrus flavor.  Just be careful not to marinate too long or the acid in the juices will start to cook the chicken.  Enjoy!!

Ingredients

  • 1 lb. chicken breasts, about 2 big breasts
  • 1 tsp. olive oil
  • For marinade:
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 4 garlic cloves, smashed
  • 1 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 2 tbsp. olive oil
  • 1 1/2 tsp. ground cumin
  • Relish:
  • 1/4 cup pomegranate seeds
  • 1/4 avocado, finely diced
  • 2 tbsp. diced onion
  • 2 tbsp. chopped cilantro
  • 1 tbsp. lemon juice
  • 1/4 tsp. kosher salt

Instructions

  1. Cut each chicken breast in half horizontally.
  2. Place one half in a plastic bag with 1 tsp. water. Pound out the chicken until it is about 1/4 inch thick. Place chicken on a cutting board and repeat with the other 3 pieces.
  3. In another plastic bag, mix together all the ingredients for the marinade. Add and coat the chicken completely with the marinade. Place in the refrigerator for up to 2 hours, turning over the bag once.
  4. Take chicken out of the marinade and pat dry with a paper towel.
  5. Heat a large non stick skillet over medium high heat. Add 1 tsp. olive oil and use a pastry brush to evenly distribute the oil around the bottom of the skillet. Place 2 pieces of chicken in the skillet and cook for about 2-3 minutes per side, or until done. Set aside and keep warm while you cook the other 2 pieces of chicken.
  6. In a small bowl, mix together the ingredients for the relish. Top each chicken breast with 1/4 of the relish.

    Now I have to go to the store and try to find the pomegranate seeds, Have not seen them here in Long Branch New Jersey. If not I will have to work to get the seeds out of the actual pomegranate. Sounds wonderful

    Just a quick note to say how much I am enjoying your website, and that's nothing to do with the fact that Neville is a very old school chum of mine! The timing couldn't have been better, as I am for the first time in 46 years (well certainly as an adult) starting to think a little about what I shovel down by throat. Coincidentally, I have just started the 5:2 diet (it is gaining a lot of interest in the UK because of a very interesting BBC programme called Horizon, where the presenter Dr Moseley talks about the benefits of fasting a couple of days a week, and hence 5:2) That aside, your writing is most engaging, and whilst I haven't tried any of your receipes yet, I shall be very soon, as twice a week I am limiting myself to 600 calories a day.   3. This sounds delicious! Going to try it this week. I beleive that if you buy the whole pomegranate, slice it in half and then hit the skin side with a wooden spoon, the seeds will pop out. Will let you know if it works. Can't wait to make this!
