Caprese Salad with Watermelon - Vegetarian, Paleo, Gluten Free

Surprise! I’ve given you another caprese salad recipe this summer. In all fairness, we eat some type of caprese salad almost every week in the summer. Let’s face it, caprese salads are simple to make and come together in minutes. Moreover, summer tomatoes are the best. In fact I try not to touch a fresh tomato any other time of year. That weird mushy texture of tomatoes during winter is not appealing. However, summer heirloom tomatoes are the stuff dreams are made of. This year I added another summer favorite to our caprese salad, watermelon.

Tomato Watermelon Salad - So easy to make

Tomatoes coupled with watermelon is a magical combination and probably the two summer fruits we eat the most of. Well actually we tend to drink watermelon. That is right. We puree large watermelons to make Watermelon Margaritas. Boy are these popular with our friends and neighbors. This time I kept a little watermelon aside to add to our caprese salad. My grandparents were visiting and I was looking for an amazingly simple salad to make for dinner. However, I wanted something a step above my normal caprese salad. Under those circumstances, I thought to add watermelon to my caprese salad.

Caprese salad with Watermelon is truly simple and quick to make. Yet the watermelon will take your everyday caprese salad up a notch. You can “wow” your guests and have a stress free side dish for dinner.
