Caprese Salad Tomato Cups

Stuff a gorgeous, summer tomato with a caprese salad made of tomato, mozzarella and arugula tossed with a light vinaigrette.

When it comes to tomatoes, I cannot help but reminisce about my childhood in New Jersey.  Do you remember when a tomato really tasted like a tomato?

It is so hard to find a tomato at a grocery store that actually tastes like a tomato. Anymore, grocery store tomatoes have no flavor and are almost always mealy.  Every year I cannot wait for tomato season and finding some heirloom tomatoes at a farmers’ market.

Good tomatoes are such a treasure that I like to keep it simple.  I want to savor the delicious flavor and not cover it up.  When I was little, my grandfather and I would have tomato sandwiches.  They were so good and screamed summer to me.  We would get tomatoes from a farm stand and they were always perfect.  The destruction of tomatoes is so sad to me.  It speaks volumes about how we have become a “quantity over quality” nation.  In the tomato growers haste to grow more tomatoes, they destroyed the essence of them. Thank goodness for the farmer’s markets and heirloom tomatoes.

This recipe is a great way to celebrate the beauty of a tomato.  The tomato cups keep the flavor and integrity of a tomato and adds a layer of flavor that accentuates it.  It is also easy and versatile.  You can use small tomatoes and make little mini appetizers or larger tomatoes and make a scrumptious side dish for dinner.  Celebrate a good tomato before they are gone again.  Until next year gorgeous tomatoes, I will miss you! xoxo

Caprese Salad Tomato Cups

  • 12 Small tomatoes
  • ¼ cup chopped roasted red peppers
  • 2 ounces chopped fresh mozzarella
  • ½ cup arugula or frisee
  • 2 tbsp. chopped basil
  • 1 tsp. olive oil
  • 2 tsp. balsamic vinegar
  • ¼ tsp. salt


  1. Cut top off of tomatoes. Do not throw away tomato caps.
  2. With a small spoon, hollow out the tomato, discarding the insides.
  3. Place on a plate. If they will not stand up, you can cut a very small slice off the bottom to make it flat.
  4. Finely chop tomato caps and place in medium bowl. Add the rest of the ingredients and toss.
  5. Fill tomatoes with mozzarella filing and serve.
