Cajun Crabcakes with Remoulade would be the perfect dish for Father’s Day. You can make them larger for dinner or make little baby ones to serve as an appetizer. Lump crab meat is e-x-p-e-n-s-i-v-e,so Father’s Day is a perfect time for a little splurge. I like to by mine at a big box store. They have good quality crab and it is a little cheaper. I know you might be tempted to load up your crabcakes with a lot of filler to make it go further, but don’t do it. It’s not worth it. A good crab cake is mostly, well crab! It is all about the crab. I have to admit, I don’t buy crab very often because of the cost. These crab cakes are so worth making and enjoying every single bite. A spicy remoulade sauce ups the ante for me. I could eat the sauce with a spoon.

For Father’s Day, I would have these ready for an appetizer while we are grilling, or I would pair them with a steak for a little surf and turf. I love the idea of putting the crab cake on top of my steak. Now why did I not think of that sooner? Brilliant idea, if I do say so myself. You could serve it with some slices of my Korean Style London Broil or Beef Sosaties, African apricot and curry marinated filets. Now that would be one special and filling dinner. It might also take up my daily amount of calories, but it is Father’s Day after all.

How do you like to celebrate Father’s Day? Are you grilling or going out?

  • 3/4 tsp . kosher salt
  • 2 tsp . olive oil
  • 2 tsp . light butter

Remoulade:

  • 1/2 cup chopped celery
  • 1/2 cup chopped green onion
  • 1/4 cup chopped roasted red pepper
  • 1/4 cup chopped flat leaf parsley
  • 1/4 cup ketchup
  • 1/4 cup reduced fat mayonnaise
  • 1/4 cup 2% fat plain Greek yogurt
  • 2 tbsp . red wine vinegar
  • 1 tbsp . horseradish
  • 1 tbsp . Dijon mustard
  • 1 tsp . Worcestershire Sauce

Instructions

  1. Pick over the crabmeat for any shell. Place in a large bowl.
  2. Place onion, pepper and celery in a small food processor and pulse until very finely chopped.
  3. Place vegetables into a non-stick skillet over medium heat. Cook for a few minutes to release any water.
  4. Add Cajun seasoning and cook, stirring, for 10 seconds. Let cool.
  5. Add mayonnaise, flax, panko, egg and salt to the crab. Add the reserved vegetables.
  6. Carefully combine all the ingredients.
  7. Wipe out the skillet and return to medium-high heat.
  8. Add 1 tsp. oil and 1 tsp. butter.
  9. Pack a small ice cream scoop (just short of 1/4 cup) with crab.
  10. Place crab into the skillet and lightly press down to form a circle. Cook for 3 minutes per side. Place on a plate and loosely cover with foil to keep warm.
  11. Add remaining butter and oil. Cook remaining crab cakes for 3 minutes per side.

For the remoulade: place all ingredients into a food processor and puree.
