Is it strange that this pasta salad makes me so happy? It isn’t because of the taste, although it is insanely good. It all started with a visit to Walmart and stocking up on Barilla® Pasta. I was trying to decide between three different types of pasta salad to make, so I asked on the Food Done Light Facebook page. The feedback came fast and furious. I loved the interaction. I use the Facebook page to try to connect and learn about all of you. When I can hear from you and your opinions, it makes my heart full.

By a landslide Caesar Pasta Salad won. My personal favorite Strawberry poppy seed Pasta Salad came in third. So I boiled a box of Barilla® Penne and decided to be a renegade and make both pasta salads. A taste testing always gets my creative juices going. As it happened, I had Ladies Night that night. We all bring a dish, so that was a fantastic time to take these healthy pasta salads out for a test run. Thank goodness my friends are so gracious about taste testing my creations. The recipes do not always work. These both were delectable! Already two wonderfully happy events to associate with Caesar Pasta Salad with Chicken.

To top it off, on Sunday, we were going to my parent’s for dinner. I love that we are keeping the Sunday  family dinner tradition going. When I was a kid, we lived in England and Sunday Dinner was huge! It always involved a big roast. I love taking the time to get together and break bread. I also know my family is always up for test tasting and giving me a very honest review. My Mom loved the Caesar Salad Pasta Salad the best. I picked the Strawberry Poppy seed Pasta Salad. My little one wanted none of them! Oh well, you cannot win them all. My husband and Dad were diplomats liking both of them.

I can always count on my family for a festive and lively decision on food. Thinking back on how this Caesar Pasta Salad with Chicken could make me feel so connected to many different people is what really makes me happy about it. Every time I think about it, a smile naturally comes to my face. Love when healthy food can do that.

Try making Caesar Pasta Salad with Chicken (or without chicken) for your family. It is easy. Put on a large pot of water  to boil. I used Barilla® Whole Grain Penne. While you are waiting for the water to boil. Make the dressing and marinade the chicken.  Cook the pasta according to the box instructions.

Grill the chicken on an outdoor grill or a grill pan. While the chicken is cooking, drain the pasta and toss it with the remaining dressing.

Caesar Pasta Salad with Chicken

Ingredients

  • 2 garlic cloves minced
  • 1/4 cup fresh lemon juice
  • 2 tsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 1 1/2 tsp anchovy paste
  • 2 tbsp 2% fat plain Greek yogurt
  • 2 tbsp extra-virgin olive oil
  • 1/2 lb boneless skinless chicken breasts or tenders
  • 1/2 box Barilla Penne Pasta
  • 4 oz sliced romaine lettuce about 4 1/2 cups
  • 1/2 cup quartered grape tomatoes
  • 1/4 cup shaved Parmesan cheese

Instructions

  1. In a small bowl, whisk together first 6 ingredients. Slowly whisk in olive oil.
  2. Place chicken in a plastic bag and pour in 3 tbsp. dressing. Let the chicken sit for 30 minutes. (Put the remaining dressing in the refrigerator)
  3. Pour a little oil on a paper towel and rub over a grill pan. Heat a grill pan over medium-high heat. Cook the chicken 4 to 5 minutes per side, or until fully cooked.
  4. Let cool slightly then thinly slice.
  5. Bring a large pot of water to boil and cook penne according to manufacturer’s instructions. Drain. Pour penne into a bowl and stir in reserved dressing.
  6. Let cool.
  7. Add in the remaining ingredients and stir well.
  8. Refrigerate until ready to serve
