Store bought Butternut Squash make an easy and healthy dinner. Pair it with some asparagus and turkey bacon and drizzle with some lightened cheese sauce.
There are certain foods that I just cannot resist. Anything with butternut squash is one of those. We happened to be at Costco and I saw these pre-made butternut squash ravioli. I don’t like to buy a lot of processed food but let’s face it, I am not going to make my own ravioli very often.
Actually never! It is on the some day list but it is certainly not something I am going to do everyday. So I picked up the package of Butternut Squash Ravioli. I put them in the freezer and forgot about them.
One night I needed a quick dinner and happened to see the Butternut Squash Ravioli. Perfect. I love to play with sauces so it was settled. Butternut Squash Ravioli it was. Now what to pair with it. I had a huge amount of asparagus and one of my favorite healthy foods, Turkey Bacon. This is not just any turkey bacon, this is Lou’s Garrett Valley Turkey Bacon, the mack-daddy of turkey bacon. It is hard to find but so worth it. I recently found it in my local grocery store! Super happy dance moment. I think I made an audible yelp when I saw it there. Normally I have to drive an hour to a large farmer’s market or Whole Foods to buy it. I stocked up and threw a few packages in the freezer.
Since I was combining some of my favorite foods why not throw in a few more. Why not deal with that mac & cheese craving I was having. While I was at it might as well clean out the refrigerator and use the 2% Velveeta cheese. I buy Velveeta once in a blue moon. It is one of those things that I like but don’t talk about liking it! The fact is, though, that Velveeta melts incredibly well. Hey, if it was good enough for my Great Grandmother to use in her mac & cheese, why not throw it in my dish.
So here is my concoction for Butternut Squash Ravioli with Asparagus & Turkey Bacon in a cheese sauce. It was so tasty! Good thing we have another container of ravioli in the freezer. I would buy some Velveeta just to make this dish again!
