Add the 2 tsp. oil, onion, carrot, and green pepper. Cook for 8 to 10 minutes, until onions are translucent. Add the garlic and ginger. Cook for 1 minute. Add the curry powder, sugar, and salt. Cook for another minute. Add the lentils, 2 cups butternut squash, broth, and coconut milk. Preheat oven to 425•. Bring to a boil and reduce to a simmer for 45 minutes. While the soup is simmering, toss 1 tbsp. oil with 1 cup of butternut squash. Pour onto a baking sheet and bake for 30 to 40 minutes. Add the cilantro and lime juice.
