I am slowly working my way through a very large stash of lentils. My stash is so big that I could fill a bunker and eat for years. It all started very innocently. Lentils are used heavily in Indian cooking, and I was on a mission to cook more of my husband’s comfort food. The problem started with my confusion about the amazing number of lentils available. There are orange, red, purple, black, green, brown and every color in between. So of the colors even have different varieties. I would go to the store for one and decide I was low on something else. I ended up with about three bags of orange lentils and not the original type of lentils I had come in for. So I went back to the store, got confused and did it all again. So you can call me the Lentil Queen now. We have no fear of running out.

 

Luckily for me, my little one loves lentils whether it is dal or soup. They also are incredibly healthy and full of good for you nutrition. So this soup, Butternut Squash Lentil Curry Coconut Soup (boy is that a mouthful), is a delectable way to enjoy lentils. This is a hearty soup that is a meal without any meat. You will feel totally satiated by the time you see the bottom of your bowl. It is perfect for the cool weather that is coming. It is coming, isn’t it? I do love a cool evening. Make a pot of this hearty and heart healthy soup for your family.

Ingredients

  • 2 tsp. grape seed oil + 1 tbsp.
  • 1 cup chopped onion
  • 1 cup thinly sliced carrot
  • 1 green pepper, chopped
  • 3 garlic cloves, minced
  • 2 tsp. grated fresh ginger
  • 2 tsp. green curry powder
  • 2 tsp. light brown sugar
  • ¾ tsp. kosher salt
  • 1 cup red or yellow lentils
  • 3 cups peeled and chopped butternut squash, divided
  • 6 cups low-sodium vegetable broth
  • 1 (14 oz.) can lite coconut milk
  • ¼ cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Heat a Dutch oven over medium heat.
  2. Add the 2 tsp. oil, onion, carrot and green pepper. Cook for 8 to 10 minutes, until onions are translucent.
  3. Add the garlic and ginger. Cook for 1 minute.
  4. Add the curry powder, sugar and salt. Cook for another minute.
  5. Add the lentils, 2 cups butternut squash, broth and coconut milk.
  6. Preheat oven to 425•.
  7. Bring to a boil and reduce to a simmer for 45 minutes.
  8. While soup is simmering, toss 1 tbsp. oil with 1 cup of butternut squash. Pour onto a baking sheet and bake for 30 to 40 minutes.
  9. Add the cilantro and lime juice.
  10. Divide soup into bowls and top with roasted butternut squash.

  24. Yum! I didn't have butternut squash so used sweet potatoes and omitted the sugar. The spice/heat of the curry was perfect. Thanks for sharing. Definitely will try some of your other recipes.
