Broccoli with Garlic Anchovy Butter

Broccoli with Garlic Anchovy Butter is a very tasty dish. Don’t be put off by the anchovies. Don’t run screaming for the door. You will like it. I actually use anchovy paste but it melts into a delicious background note in this dish. I will not be eating an anchovy fillet anytime soon but I do enjoy cooking with anchovy paste. I had to get over the “ick” factor and once I did, wowzer!

The inspiration for this dish came from a dip called Bagna Cauda. It’s butter, garlic and anchovies all melted together. Oh my is it good. Since the dip is literally dripping with butter, I wanted the flavor without all the fat. It took me a few tries to make this delicious broccoli dish. I am forever trying to balance the amount of fat with flavor. This recipe had my taste buds singing.

I had no idea broccoli was such a popular vegetable until I conducted a little poll on Facebook. It was by far the most popular vegetable. Since it is one of the few “green” vegetables my little one will eat, I was happy to come up with a new preparation. Usually I just roast it with a little olive oil, salt and pepper. It’s quite tasty but Broccoli with Garlic Anchovy Butter is better. Butter made it better.

If you are still thinking “eww”, try it.  You will like it.  I promise, it does not taste like anchovies.  No one will even know that anchovy paste is in there.  They will just think this is the best broccoli they’ve ever had.  It can be your little secret that anchovy paste is the star ingredient.  Ok, garlic definitely helps too.  Really, try it!

Broccoli with Garlic Anchovy Butter

Ingredients

  • 4 cups broccoli florets
  • ¾ cup water
  • 1 tbsp. light or regular butter
  • 1 tsp. anchovy paste
  • 1 garlic clove, minced

Instructions

  1. Place broccoli and water into a non-stick skillet. Bring to a simmer. Cover and cook until broccoli is just fork tender, about 10 to 12 minutes.
  2. Drain water.
  3. In a small bowl, mix together butter, anchovy paste and garlic.
  4. Mix anchovy butter into the broccoli.
