Breakfast Tostada with Egg and Salsa (Healthy Low Calorie)

I almost cannot believe it. How did this non-morning person manage to conquer breakfast? One of my really big “wins” this year has been my breakfast. Ok, I still don’t want to eat until I’ve been up for over an hour, but I am managing to actually make myself a hearty, satisfying breakfast that is Weight Watcher compliant.  It all started because of a crunchy tostada that is 50 calories and only 1 Weight Watcher smart point.  The next step came with salsa, store-bought, in this case.  Cooking the egg in some delicious, veggie filled salsa registered a flavor overload.  With a little smear of refried beans and even a sprinkling of cheese, I can still have a protein filled breakfast in under 5 minutes.  Easy, peasy is the only way I do breakfast.

In between taking large gulps of coffee, I can throw this breakfast together.  I heat up the salsa in a pan while I get the tostada out and measure my cheese.  Yes, I measure my cheese.  Next I make a little well in the salsa and carefully ease my egg into the pan.  Put a lid on it for a few minutes and breakfast is served.  You get a deliciously, runny egg mingling with all that scrumptious Mexican flavor.  Woo wee is this a good breakfast.  I’ll be sharing some more breakfast recipes soon.  After many, many attempts, I think I have mastered an omelet.  I can even flip the omelet in the air and catch it back in the pan to cook the other side.  I won’t mention all the times I missed and had egg all over my stove.  No siree, that was just a blimp in journey of omelet supremacy.  Rock on!

Breakfast Tostada

Ingredients

  • 1 tostada 50 calories
  • 1/2 cup fat-free refried beans
  • 2 tbsp reduced fat shredded cheddar cheese
  • 1/3 cup salsa
  • 1 egg

Instructions

  1. Place tostada on a plate.
  2. Place refried beans and cheese on top.
  3. In a small skillet over medium heat, warm the salsa.
  4. With a spoon, make a well in the center of the salsa and carefully place egg in the center.
  5. Cover and cook for about 3 minutes.
  6. Using a spatula, gently place egg on top of along with salsa.

    Loved the note about measuring cheese. I measure EVERYTHING! It's how I got into making recipes - I loved following them because I'm a precise "measure-aholic" :) These are such a perfect idea! We really need to work on savory breakfasts in our house so I'm keeping this one on file.

      It is really important to measure how calorie ingredients like cheese and especially oil. You can add hundreds of extra calories so easily. Thank goodness for my trusting food scale. Hope you enjoy this delicious breakfast.
