I have had a breakfast pizza recipe rolling around in my brain for a few years now. It took quite a while and a swift kick in the tush from Recipe Redux for a pizza theme this month. Finally I could bring this recipe idea to fruition. It all started a long time ago in a land far, far away.
Once upon a time the three foodies went to No. 246 in Decatur, GA. The Father and Mother Foodie shared a breakfast pizza with hollandaise sauce, prosciutto and eggs. The Baby foodie had a kid’s cheese pizza. The cheese pizza arrived first and the little foodie happily set upon eating it. Of course the Father and Mother Foodie had to try this delectable looking pizza. Each took one bite, then another, then another. The Baby Foodie cried out “Don’t eat my pizza”. The Father and Mother Foodie whined “This is the best cheese pizza ever!”

Then the big breakfast pizza arrived. Father and Mother Foodie each took a slice and greedily took a bite. Silence. Was it as good as the “best cheese pizza ever”? Would the Father and Mother Foodie stop eating the Little foodies cheese pizza and stick to their own? Stay tuned.

Seriously, both pizzas were amazing. We now call No. 246 “the restaurant with the best cheese pizza ever”. We don’t care if it is supposed to be a kid’s pizza. It is amazing, perfect crisp crust, light sauce and ooey, gooey cheese. The breakfast pizza was also amazing. They slice prosciutto in the restaurant and use all local ingredients. We can’t forget the hollandaise sauce. What does not taste better with hollandaise?

As I’m sure you can imagine the calories on this pizza have to be pretty high. This is definitely a once in a while meal but you can make your own. So I set about making Egg, Spinach and Canadian Bacon Breakfast Pizza. The hollandaise was a none starter. I have tried and tried to make a good low fat hollandaise but have given up. I’ll just save it for special occasions. Luckily you won’t miss it with this pizza. The vegetable spinach sauce gives loads of flavor and the eggs perched on top of the pizza look so pretty. This is a pizza that will satisfy you for breakfast, lunch or dinner.

Egg, Spinach and Canadian Bacon Breakfast Pizza #reciperedux

Ingredients

  • 1 pizza dough, set on counter for 30 minutes – (here is my pizza dough recipe )
  • ½ cup chopped onion
  • ½ cup sliced mushrooms
  • 1 tbsp. chicken broth
  • 1 cup chopped tomato
  • 2 cups baby spinach
  • ½ tsp. kosher salt
  • ¼ tsp. fresh ground black pepper
  • 3 oz. part skim mozzarella cheese, shredded
  • 4 slices Canadian bacon, diced
  • 4 eggs
  • 1 tsp. Italian or pizza seasoning blend

Instructions

  1. Place a pizza stone in an oven and preheat to 500°.
  2. Flour a work surface and roll pizza dough out to a 12 inch circle. Prick dough with a fork.
  3. Heat a skillet over medium high heat. Add onions and mushrooms, stir constantly until onion starts to brown and stick. Add chicken broth and stir onions. Let cook until transparent.
  4. Add tomato and cook, stirring occasionally for 2 minutes.
  5. Add spinach, salt and pepper. Stir and cook for 1 minute. You want the spinach to wilt very slightly. Take off heat.
  6. Flour a large cutting board (one that will fit pizza on it). Place dough on top, reshaping if needed.
  7. Spread vegetable mixture around the dough. Sprinkle with Canadian bacon and mozzarella.
  8. Carefully crack eggs open on to the pizza. Sprinkle with Italian seasonings.
  9. Bake for about 10 to 15 minutes. Dough should be crispy and egg whites cooked.
