To say I am not a morning person is the understatement of the century. If there was one thing I could change about my life, it would be to wake up happy and refreshed every morning. Alas, I have given up hope of ever bounding happily out of bed with all engines revving. Instead I groggily hit the snooze; only to remember I don’t have an extra 10 minutes to snooze. I need to get up now. I stumble down the stairs with the dog in tow. She is doing her pee pee dance and wants to be let out now. Sorry Lucy, coffee first. I turn on the coffee machine then she can go out.
As usual, I have given myself too much to do in the morning and too little time. I won’t be flipping pancakes or stirring a batch of scrambled eggs. I head to the freezer and pull out a Lean Cuisine Morning Collection breakfast sandwich. I picked some up at Walmart and always have some in the freezer. The Veggie Egg White Muffin happens to be my favorite as well as my husband’s. While it is in the microwave cooking, I can pour myself a cup of coffee and put away the dishes from the night before. I always challenge myself to get it all done in the 2 minutes it takes the muffin to cook. If I have to empty the dishwasher, I’m sunk. I cannot get that done in 2 minutes. Believe me, I’ve tried. It wasn’t pretty!
If it is an early gym day, I eat my muffin on the way. Thank goodness it is portable and doesn’t make a mess. If I’m not leaving for the gym, it is right to work. Luckily for me, I can go to work in my pajamas since my office is the kitchen table. As long as I have my computer, my coffee and my Lean Cuisine Morning Collection Egg White Muffin I am set. Just don’t try to ask me any questions or expect me to be overly sociable for the first hour. Luckily the cat and dog don’t mind if I don’t chat with them in the morning. By the time I’ve finished my coffee and muffin, I am ready to face the day and #MyGoodLife.
Since my brain literally does not function first thing in the morning, I have to plan what I am going to have for breakfast. I always have these muffins in the freezer and some fruit in the refrigerator. I make myself a cappuccino every morning with a half a serving of milk. That way breakfast is ready in under 5 minutes. A lot of people plan their dinners for the week but forget about breakfast. Stock your freezer with these muffins, baked oatmeal or whip up some overnight oats. Have some fruit already cut up and add a little extra milk to your coffee or tea and you are ready to face the day. See below for a week of breakfast menu plans. Monday: Lean Cuisine Morning Collection Veggie Egg White Muffin, 1 wedge of cantaloupe and 1 glass of milk.
Tuesday: Lean Cuisine Morning Collection Apple, Cinnamon & Almond Oatmeal, a smoothie with 1 cup of fruit, 1/2 cup yogurt and 1 cup water.
Wednesday: Carrot Cake Baked Oatmeal, coffee with 1/2 cup milk and 1/2 cup cottage cheese or plain Greek yogurt.
Thursday: Lean Cuisine Turkey Sausage English Muffin, 1 cup strawberries and coffee with 1/2 cup milk
Friday: Mango Guanabana Smoothie
Saturday: 1 scrambled egg, 2 pieces of homemade Turkey Breakfast Sausage, 1 slice whole wheat toast, 1/2 grapefruit and coffee with 1/2 cup milk
