I hadn’t eaten Shake N Bake Pork Chops in ages until my Dad decided he wanted them for his birthday. In fact I had forgot how good they were. I especially loved the spice and that crunch of breaded pork chops. It inspired me to make my own at home and I chose to use rice crackers. That meant they were naturally gluten-free too. I had used rice crackers as my crispy coating on Singapore Crispy Shrimp recipe. The rice crackers make an amazing crispy topping.
So I whipped up an easy spice mix and crushed the rice crackers. Some of the breaded pork chops had rice crackers more crushed than others. That lead to an interesting discovery. I preferred the breaded pork chops where the rice crackers were crushed more. So go ahead and pulverize them. A few small pieces of cracker won’t hurt.
The other really important part of Breaded Pork Chops is the pork itself. All pork chops are not the same. I know I’ve told you about my Butcher before. In this case I picked up my center cut pork chops from them. These are local pork and have a fantastic “pork” flavor. You would think pork chops would taste like pork, but most pork does not anymore. That is why so many people feel they need to brine them.
These pork chops do not need a brine. They are especially full of “pork” flavor. Find a good butcher and, if you can, get local pork. It will be so much better than the commercial pork chops. With good quality pork chops, this dish is simple to make and comes together in a matter of minutes. Enjoy Crispy Oven Fried Breaded Pork Chops again just like you did as a child.

Healthy Gluten Free Oven Fried Pork Chops
- 4 center cut bone-in Pork chops
- 1 tsp. baking powder
- 1 tsp. Paprika
- 1/2 tsp. Onion powder
- 1/2 tsp. Garlic powder
- 3/4 tsp. Salt
- 1/8 tsp. fresh ground Pepper
- 1 egg lightly beaten
- 1 cup rice cracker crumbs about 40 crackers
Preheat oven to 425•. Place a wire rack on top of a baking sheet. Spray with non-stick spray.
Place pork chops on a cutting board.
Mix together baking powder through pepper. Sprinkle on both sides of pork.
Dip pork chop in egg, letting any excess drip off.
Place cracker crumbs in a bag. Place one chop inside bag and shake to cover.
Place on wire rack. Repeat with remaining pork chops.
Bake for 10 minutes. Turn over and bake for another 5 to 10 minutes, or until internal temperature is 155*.
