Burger with Blue Cheese Crispy Shoestring Onions and Mushrooms

Adding a little ground mushroom is the trick to a low calorie, low fat burger. Load on some crispy shoestring onions and mushrooms and a slice of blue cheese for the ultimate healthy hamburger.

Do you ever equate a song with food? I don’t mean a song that has anything to do with food, but when I think of a hamburger I actually hear it said, in my head, to the Beasty Boys song “Girls”. Instead of girls, girls, girls, my mind automatically thinks burgers, burgers, burgers. I haven’t the faintest idea why. It is really bizarre. The Beasty Boys put me in a good mood and so do these burgers. Can it really be the reason my warped mind related the two? Is it stuck in your head now too? Is your head bobbing to the beat of the song? I do have to say this burger is pretty phenomenal, and there are times when only a hamburger will do.

There is nothing like a big, juicy burger. When I am craving one, I want it made with beef not turkey. Don’t get me wrong, turkey burgers are fine when you want a turkey burger. They do not work for me as a substitute for a hamburger. So I had to find another way to enjoy these tasty morsels. Mixing ground mushrooms with the ground beef is the perfect solution. I still get a big, juicy burger without all the calories. It gets even better with crispy baked shoestring onions and mushrooms. They really do get crispy in the oven. I could eat them right off the baking sheet, but putting them on a burger with a slice of blue cheese is sheer heaven. This is my kind of burger. Give it a try. I bet it will be your kind too.

Blue Cheese Burger with Crispy Shoestring Onions and Mushrooms

Ingredients

For the shoestring mushrooms:

  • 10 oz shitake mushrooms cut into thin strips
  • 3 large shallots halved and thinly sliced
  • 2 tbsp Marsala wine
  • 1 tbsp olive oil
  • 3/4 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

For the burgers:

  • 4 oz mushrooms
  • 1/4 cup chopped onion
  • 1 lb extra lean ground beef
  • 2 tsp reduced sodium Worcestershire sauce
  • 1 tsp kosher salt
  • 1/4 tsp fresh ground black pepper
  • 2 oz crumbled blue cheese

Instructions

For the mushrooms:

  1. Preheat the oven to 450°.
  2. On a large baking sheet, mix together all the ingredients for the shoestring mushrooms.
  3. Bake for 15 minutes. Stir and bake for another 5 minutes, or until crispy.

For the burgers:

  1. In a small food processor, pulse together the mushrooms and onions until very finely chopped.
  2. Add to a large bowl along with the remaining ingredients.
  3. Mix well and form into four patties.
  4. Spray or oil the grates of your grill well. Heat a grill or grill pan on high heat. When very hot, add patties and cook for about 2 minutes on each side for medium rare. (3 minutes on each side for medium and 4 minutes for medium well).
  5. Take the burgers off and let them rest for a few minutes.
  6. Place onto a bun and top with mushrooms and onions and 1/2 oz. blue cheese

  9. Christie, You are too right--when you want a burger a turkey burger ain't gonna cut it. I had a lovely Greek turkey burger out at lunch the other day, but when I crave a burger, it's beef.
