Are there some foods that just confound you?  Quinoa was one of those.  I could not cook it properly for the life of me.  Furthermore, I tried lots of different methods and most of the time it was overcooked before it was supposed to be done.  Other times I forgot about it.  If I managed to cook it half decently, the other ingredients I threw in with it totally ruined the dish.  I saw tons of quinoa recipes everywhere and just could not understand why of all things I could not cook quinoa.

I read articles about cooking quinoa and all the tips I could find. Additionally, I drooled over other blogger’s gorgeous quinoa salads and pinned them to try.   In fact I was beginning to think that my quinoa was just cursed.  Finally I gave it one more try and really watched to make sure I didn’t over cook it.  Well miracle of miracles, it was perfectly cooked.

Now that I had this perfectly cooked quinoa I needed to do something with it.  I really didn’t want to ruin yet another quinoa dish.  So I decided to take a light hand with it and throw in a few choice ingredients.  Finally success!  Boy did it feel good to get that quinoa monkey off my back.  I’m not a quinoa failure anymore.  Now that I’ve gotten one recipe under my belt, I’m looking forward to playing with quinoa and seeing what else it can do.  In fact I’ve seen some lovely bread recipes with quinoa in them.  That might be the direction I go in next.

This salad takes advantage of the fresh blackberries in season now.  The color of the blackberries really pops against the neutral color of quinoa.  It is a delicious pairing perfect for any summer BBQ.  The salad is easy and comes together in no time.  Just keep a timer on when you are cooking your quinoa.  Then you don’t have to worry about being a quinoa failure too.

Blackberry Quinoa Salad

Ingredients

  • 1 cup uncooked quinoa
  • 1 garlic clove, minced
  • 1/3 cup meyer lemon juice
  • 1 meyer lemon zest
  • 2 tbsp. olive oil
  • 3/4 tsp. kosher salt
  • 1/8 tsp. fresh ground black pepper
  • 1/2 cup chopped cucumbers
  • 3/4 cup blackberries
  • 10 leaves mint, chopped
  • 10 leaves basil, chopped

Instructions

  1. Cook quinoa according to manufacturer's directions.

  2. In a large bowl, whisk together lemon juice, garlic, lemon zest, salt and pepper. Whisk in olive oil.

  3. Drain quinoa and put into the bowl with the vinaigrette. Toss to combine. Let cool.

  4. Stir in the rest of the ingredients and serve room temperature.
