Healthy Banana Bread Pancakes with Nutella

Did you know that February 17th is International Pancake Tuesday? To get you prepared for this momentous day, I’ve partnered with Nutella to share a pancake recipe now. My daughter would be happy if every day were National Pancake Day. She is becoming quite the pancake aficionado and expert pancake flipper. A few years ago, I almost never made pancakes. When my husband started to travel more for work, I started making baked pancakes for dinner. Oh they are so easy and it was a fun way for us to enjoy dinner without Daddy. My daughter loved them, and it snowballed from there. Now pancakes happen quite often but almost always for dinner.

 

My husband even bought me a pancake dispenser for Christmas. My daughter and I love to make different shapes and letters out of our pancakes. The first time we tried it, she proudly wrote her name using pancake batter. While I made the worst cat shaped pancake ever. It still makes me laugh. Apparently drawing with pancake batter is not a talent I possess. My daughter didn’t mind. She thought it was so cute, and that is what counts. Pancakes mean everyone is in the kitchen together. We laugh at the shapes that each other makes and just enjoy family time together. I think that is the true secret that makes Pancake night so popular in my house. Pancake night is togetherness and happiness, a family affair.

 

Adding more fun to our pancake night was the Nutella. Yum! Warm banana pancakes spread with Nutella and topped with more bananas makes a spectacular dinner. Ok, you can eat it for breakfast, too. Nutella is made with hazelnuts, skim milk and a touch of cocoa. There are actually no peanuts or gluten in it; nor is it made in a facility with peanuts or gluten. You don’t have to worry about cross-contamination if you have a peanut or gluten allergy in the family. It is also kosher and has no artificial preservatives or colors. Adding a little to your pancakes is a great way to bring a smile to your child’s face. Who doesn’t want to start the day looking at the smiling face of the ones you love. Could there possibly be any better way?

Banana Nutella Pancakes

Banana Bread Pancakes with Nutella

Ingredients

  • 1 cup all-purpose unbleached flour, 120 grams
  • 1 cup whole wheat flour 120 grams
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp ground cinnamon
  • 2 large eggs lightly beaten
  • 3 tbsp oil
  • 3 tbsp 0% fat Greek yogurt
  • 1 cup non-fat milk
  • 1 over ripe banana mashed
  • 1 tsp vanilla extract
  • 3 1/2 tbsp Nutella®
  • 3 bananas sliced

Instructions

  1. In a large bowl, whisk together first 8 ingredients.
  2. In a medium bowl, whisk together eggs, oil, yogurt, milk, mashed banana and vanilla.
  3. Stir wet ingredients into dry ingredients. Stir until just combined.
  4. Heat a griddle to medium heat.
  5. Pour 1/4 cup of batter onto the griddle for each pancake.
  6. When pancakes start to bubble and form on the end, flip over and cook on the other side until done.
  7. Place two pancakes on each plate. Spread with 1/2 tbsp. Nutella and sliced bananas.
