I have a serious hatred of washing dishes. I am sure I am not alone. Put your hand up if you hate washing dishes. That is why dinner with one pan is so enticing. Plus my baking sheets are pretty much my favorite cooking vessels. I’ve got two tips on baking sheets. First go to a restaurant supply store and buy them. Do not get non-stick. Second, never use non-stick cooking spray on them. Never, ever!
Why get ones from a restaurant supply store, you ask? They are cheaper and better quality. Baking sheets are serious work horses in a restaurant. They need ones that will take a beating and keep on going. They also wash so easily. Which leads me to the next tip, never ever, ever use non-stick cooking spray on your baking sheets. It ruins the finish on them and makes the food stick. I never use non-stick cooking spray on my pots or pans.
The other star in this baked chicken thighs is paprika. Paprika is one of the spices that I will spend a little more on. I actually order it off the internet. I like to keep hot, sweet and smoky one on hand. A little dash adds fabulous flavor and color. It dresses up these baked chicken thighs and mingles with the juices from the citrus fruit. I used smoky paprika in this dish to add – well a smoky flavor. Stating the obvious there. Any hoo, it really does give the feel of a barbecued dish without facing the freezing cold to barbecue outside.
This is also a one pan wonder. Yeah! Everything cooks together on this one shiny baking sheet. Dinner is served in 30 minutes. That is another win! This is quick, easy, one pot and delicious. I cannot think of anything better for a weeknight. Ok, a glass of wine to go with it would send me over the moon. Zesty Paprika Baked Chicken Thighs with Lemony, Brussels Sprouts and Potatoes Bake (Low Calorie, Low Fat)
- 1 lemon
- 1 orange
- 1 ½ lb . Brussels sprouts , trimmed and halved
- 4 small shallots , quartered
- 1 lb . baby potatoes , quartered
- 1 tbsp . plus 2 tsp. olive oil , divided
- 1 tsp . kosher salt , divided
- ½ tsp . fresh ground black pepper , divided
- 2 cloves garlic , minced
- 1 tbsp . smoked paprika
- 1 tsp . dried thyme
- 1 lb . boneless , skinless chicken thighs
Zest the lemon and the orange. Thinly slice the fruit.
Position oven rack on lower third of the oven. Preheat to 450°.
In a large bowl, toss Brussels sprouts, shallots, potatoes, lemon and orange slices with 1 tbsp. oil, ½ tsp. salt and ¼ tsp. fresh ground black pepper.
Pour onto a large baking sheet.
In a small bowl, mix together garlic, ½ tsp. salt, ¼ tsp. black pepper, paprika, thyme, zest and 2 tsp. oil. Brush over the chicken.
Place chicken onto the baking sheet in between the Brussels sprouts.
Roast for 20 to 25 minutes. Brussels sprouts should be tender and chicken should be cooked to 165°.
