Bacon and Jalapeno Burgers with Pimento Cheese

This recipe is dedicated to my husband, Neville.

We like to go to a local gastropub and have their burger topped with bacon, pickled jalapeno and a huge scoop of pimento cheese.  Is your mouth drooling? The burger is out of this world.  It is also out of this world with calories and fat.  The burger is not really an option for us anymore.  Even though I am the one with the weight problem, my husband had a heart attack a few months ago at the age of 46.  It happened to coincide with the day I had originally planned on launching this blog.  Needless to say, everything was put on the back burner as we struggled to come to terms with living with a heart condition and what it meant.  A few months later after some ups and downs, we seem to be finding the way to a “new normal”.

Happily, the “way” does include a smoky, spicy, cheesy burger – just a healthier one.  What an exciting moment! (Said very tongue in check)  All the flavors we love were wrapped up in this burger.  It was sheer pleasure to take a bite and then another and another and have no guilt. This is a good size burger thanks to replacing some of the beef with mushrooms.  The mushrooms impart a beefy flavor and moisture so you feel like you are having a full fat burger with lean ground beef.

It also has a little kick from the jalapeno.  Feel free to add more or less depending on your spice desire.  Since the jalapeno is pickled, you get a nice back drop of acid.  Hmm – salty, spicy, sour and a little sweetness from the bun.  The perfect bite but wait it gets better – the pimento cheese made with non fat Greek yogurt instead of mayo.  You cannot forget the cheese.  Cheese makes everything better.  The perfect bite + cheese = sheer heaven.

A little note about the bun – it is a buttery brioche bun.  I found an incredible recipe on The Café Sucré Farine blog.  I was able to lighten the recipe to get it down to 120 calories.  I’ll share my adaption soon.

Ingredients

  • 2 slices center cut bacon
  • 3/4 lb. 93% lean ground beef
  • 4 ounces sliced button mushrooms
  • 1/4 cup chopped onion
  • 2 tbsp. minced pickled jalapeno
  • 1 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 2 tbsp. non fat Greek yogurt
  • 2 tbsp. minced pimento
  • 1/4 cup (1 ounce) shredded low-fat cheddar cheese (I used Cracker Barrel 2% extra sharp)
  • 1 tbsp. shredded monterey jack cheese
  • 1/8 tsp. garlic powder
  • 1/8 tsp. onion powder
  • 4 lettuce leaves
  • 4 slices tomato

Instructions

  1. In a medium skillet, fry bacon over medium heat until crispy. Transfer the bacon to a paper towel to drain then crumble.
  2. Place mushrooms and onions in a mini food processor and pulse until minced.
  3. Pour out the bacon grease and return the skillet to medium heat. Saute onions and mushrooms until vegetables release their liquid. Pour off the liquid and transfer the vegetables into a large bowl and let cool.
  4. Add ground beef, crumbled bacon and jalapeno to the onion mixture.
  5. Season with kosher salt and pepper.
  6. Mix gently with your hands. Then divide and form into 4 equal patties.
  7. In a small bowl, mix together the yogurt, pimento, cheeses, garlic and onion powder. Add a pinch of kosher salt if needed.
  8. Heat a grill or grill pan on high heat. Grill patties for about 2 minutes on each side for medium rare, 3 minutes on each side for medium and 4 minutes for medium well. Top each burger with a quarter of the pimento cheese and allow cheese to melt just slightly. Take burgers off the heat.
  9. Place onto a bun and top with lettuce and tomato. Enjoy!
