I have been on a vegetable buying binge lately.  I go to the grocery store and just cannot narrow down which ones to buy for the week.  Spring is a fabulous time for vegetables.  I come home with enough to feed an army.  So I have been trying to think of different ways to cook them.  The baby vegetables are adorable so I could not resist these cute little zucchini.  All winter I roasted vegetables and I seem to be in a sauteing mood for Spring.  So I decided to saute these baby zucchini and serve with some toasted bread crumbs.  What a delicious side dish it made.

I am really glad Winter is over.  For some reason, my diet goes down the tubes over the Winter.  It probably has more to do with the food frenzy between Halloween and New Years.  Then it takes me a while to get my act back together.  As soon as the Spring produce starts to come out, my diet improves.  I cannot wait to eat all the luscious fruit and vegetables.  I start to crave salads and grilled anything.  I have gone back to setting weekly weight loss goals for myself although this week was tough.  My daughter was on Spring Break and it seemed like we ate out for lunch almost everyday.  Next week it is back to the gym full force and serious diet planning.  I need to sit down and plan my breakfast and lunches.  I always plan out our dinners each week and it helps to keep me on track.

Sauteed Baby Zucchini with Toasted Lemony Breadcrumbs

Ingredients

  • 1/4 cup fresh bread crumbs
  • 1 tbsp. light butter
  • 1/4 cup minced onion
  • 1 lb baby zucchini
  • Zest of lemon
  • 1/2 tsp. kosher salt
  • 1/4 cup water

Instructions

  1. In a skillet over medium heat, brown the bread crumbs. Watch them carefully so they don’t burn. Be sure to stir often. Once browned, pour into a small bowl. Stir in the lemon zest and salt.
  2. Wipe out the skillet and return to medium heat. Melt the butter and sauté the onion until tender.
  3. Add zucchini and water. Place a cover over the skillet. (I use a cookie sheet) and cook for about 5 -7 minutes or until just fork tender.
  4. Gently toss zucchini with bread crumbs and serve.

  1. I've never seen baby zucchini at the store, but I think I'm going to have to look harder! This recipe sounds so tasty. I love pretty much all fresh veggies, so I'm always so happy when spring comes in and all the sad, droopy excuses for veggies inthe winter are replaced with fresh and tasty options!

  3. I saw baby zucchini this size at Trader Joe's last week. Can't wait until I can get them at the farmer's market, though. They're one of my favorite vegetables, but I've never tried them with crumbs like this. Yum!
