Want a quick, healthy dinner? Try Asparagus, Quinoa and Salmon Salad. It is a nutrition power house that is loaded with healthy protein and omega 3 fatty acids. Healthy eating is just a bite away.
Apparently the most searched ingredients on Food Network are Quinoa, Kale and Chicken. I found that very interesting. Quinoa and kale seem to be the “it” food and chicken is one of the cheaper meats. Food Done Light is definitely light on quinoa recipes. It is not a favorite ingredient of mine. It can be finicky to cook. I feel like quinoa goes from under cooked to over cooked in a matter of seconds. It also is hard to impart flavor into it. So I set about making a recipe that challenged my notion of quinoa being flavorless.
I’m never going to want to sit down and eat a bowl of quinoa; but I did thoroughly enjoy it in this salad. It’s slightly nutty flavor reminded me of small croutons. The champagne shallot vinaigrette imparted much needed flavor into the quinoa. What about kale and chicken? Forget about it! I used my other favorite ingredients instead, asparagus, arugula and wild salmon. What a masterpiece this salad is. It is loaded with healthy ingredients and flavors. It is perfect for dinner or even a dinner party.
This dish reminds me of summer and at this point, I am so over Winter. I feel like I am wishing time to go even faster than it already does. I can’t help it. I’m ready for summer vacation and days at the pool and summer vegetables. I am not ready for a bathing suit but it is just more inspiration to eat healthfully and exercise. Having said that, I am by no means ready for the heat and humidity. Can we have Spring weather all summer? There is so much to look forward to in Spring too. The trees are starting to bloom and so is the pollen. Asparagus is already cheaper and more delicious. We are also enjoying artichokes. I saw some baby squash at the grocery store too. Yippy! I am sick of winter produce. Plus we have a mini vacation to visit my grandparent’s during Spring break. Then there is Easter and in May, I am going to a food conference.
The warmer weather also has me craving smoothies in the morning. Look for another smoothie recipe coming up late April or May. Food Done Light’s Easter menu is complete and will start at the end of March. You are going to see more Spring produce and lighter fare. There will be a few comfort food recipes thrown in. Little “L” still wants meatballs and sloppy joes. Healthy versions of both will be coming up in a few months. I’ve also got some lemon desserts. After Easter look for some Mexican recipes to celebrate Cinco de Mayo. Then there is Memorial Day, July 4th, and Labor Day. I better get busy. There is one holiday after another soon. In the meantime, enjoy an Asparagus, Quinoa and Salmon Salad. It is perfect for our journey of healthy eating one bite at a time.
