Asparagus Prosciutto Bundles

The movie award session is in full swing. A little confession, I have not seen a single movie. In fact when my husband and I recently went to see Star Wars, we could not remember the last time we had been to the movies to see something besides a kid’s movie. When did that happen? We use to go to the movies a lot. I can remember when a full priced evening ticket was $7. I don’t even know what it costs now nor do I want to. Given my total lack of current movie viewing, it does seem a little silly that I will watch the award shows. It is so cliché, but I do love to see the dresses. Even more than that, I love award-winning food.

For the “big” movie awards, elegant food is in order.  You can pretend to be dressed up in a designer dress, and enjoy some fancy  looking food.  No one has to know that it took you 15 minutes to make.  Yes, these Asparagus Prosciutto Bundles can be done in 15 minutes.  They are easy, peasy leaving more time to ogle over the dresses and pick your own best dressed.  I think these gloriously, green, asparagus spears would win the best dressed award.  Doesn’t their pink sash of prosciutto look beautiful?  Plus they are perfectly accessorized with a garlic and balsamic vinaigrette.  They will win the award for best of the night.

Since we are trying to fit into those snug fitting designer dresses, I used a little SPLENDA® Granulated to give a hint of sweetness to the dressing.  I am happy to swap out sugar for a little no-calorie SPLENDA® granulated.  It is one way I can keep to my goal to reduce my sugar intake.  SPLENDA® Sweetener has so many different ways to help you reduce sugar on Sweet Swaps.

Asparagus Prosciutto Bundles

Ingredients

  • 1 1/2 lbs. asparagus, ends trimmed
  • 4 slices prosciutto, cut in half lengthwise
  • 3 tbsp. balsamic vinegar
  • 1 tbsp. water
  • 3 garlic cloves, minced
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. dried oregano
  • 1/2 tsp. kosher salt
  • 1/4 tsp. fresh ground black pepper
  • 1/2 tsp. SPLENDA® granulated
  • 2 tbsp. extra-virgin olive oil

Instructions

  1. Preheat oven to 400•.
  2. Divide asparagus into 8 bundles
  3. Lay a half of a piece of prosciutto on a cutting board.
  4. Place asparagus on one end and roll up.
  5. Place on baking sheet. Repeat with remaining asparagus.
  6. Bake for 12 minutes, or until asparagus is fork tender.
  7. In a glass jar, pour in remaining ingredients.
  8. Shake well.
  9. Place bundles on a serving platter and spoon on dressing.

  21. Loving asparagus is easy but this recipe is unique. I think wrapping them in a little prosciutto is ingenious. The combination of flavor is probably awesome. I would cut the Splenda though.
