I have to admit, I have been thinking about apple pie a lot lately. Ever since apple season started, I cannot get enough. I would love to eat it for a snack, but I should probably make a better food choice. So I figured out a way to enjoy the flavor of apple pie instead, apple parfait. I started with vanilla Silk Dairy Free Yogurt Alternative. Then I added a little homemade apple pie filling and topped it with a little pie crust cookie.

I love the creaminess the Silk Dairy Free Yogurt Alternative brings. Plus it is made with plant protein and has 6 grams of soy protein per serving. I would even be happy to serve an apple parfait as an after school snack or even a dessert. The filling is mostly fresh apples with just a dash of sweetener. The little pie crust cookie is really for fun. Wouldn’t these be cute on a buffet table for an autumn party? I have to admit I do love pie crust. Apple Parfait with Dairy Free Yogurt Alternative

Ingredients

  • 4 5.3 oz vanilla Silk Dairy Free Yogurt Alternative
  • 2 golden delicious apples finely chopped
  • 1 tbsp. brown sugar
  • 1 tsp. ground cinnamon + more for dusting
  • 1/8 ready made pie crust

Instructions

  1. Preheat oven to 350*. Line a baking sheet with parchment paper.
  2. Cut four 1-inch circles from a pie crust.
  3. Place on a baking sheet and sprinkle with 1/8 tsp. cinnamon
  4. Bake for 10-15 minutes, or until pie crust is done.
  5. In a small bowl, mix together apples, sugar and cinnamon.
  6. Add to a small pot over medium heat. Cook, stirring frequently, until apples slightly soften, about 5 minutes.
  7. Layer yogurt and apples into four serving bowls and top with one pie cookie.
