I am sure you know about Georgia peaches, but Georgia also grows apples. I love to use apples in my recipes just as much as peaches. As it is the season of apple pie, I was looking to make a fun spin on a pie. Hence Apple Pie Coffee Cake comes in. You have an easy coffee cake base made with Martha White Apple Cider Muffin Mix. Next you just add milk and the cake portion is done. In addition the topping is almost as easy. In fact your food processor does all the work. I did not peel my apples. There is so much nutrition in the peel; there is no way I am throwing it out. A fun and delicious cream cheese glaze tops off this delicious coffee cake. I found Martha White baking mixes at my local Kroger. Find a Kroger near you.
I love the idea of Apple Pie Coffee Cake for a holiday brunch. I made it in a 13 x 9 inch baking dish so it will feed a crowd. You can make a cute decoration with the cream cheese glaze or slather it on. If I was more artistic, I would have loved to pipe apple shapes onto the top. Sadly,that is beyond my capabilities. I can make a mean coffee cake, but piping cute little apples on top is stretching it too far. I was congratulating myself on the swirls. Don’t look to closely they are not uniform or perfect in size. What can I say? It’s homemade and looks that way. The taste will knock your socks off, though.
I loved using the muffin mix for the base of the cake. With Martha White you only need to add milk to the mix. What a time saver. I did not have to wait for eggs to come to room temperature or look at ways to cut some fat because it was loaded with oil or butter. Literally after a quick stir, the cake is ready. Apple Pie Coffee Cake
- 4 Granny Smith apples coarsely chopped
- 2 tbsp. brown sugar
- 1 tbsp. lemon juice
- 2 tsp. ground cinnamon
- Pinch of kosher salt
- 1 tbsp. cornstarch
- 1/2 cup natural applesauce
- 1 7oz. package Martha White Apple Cider Muffin mix
- 3/4 cup reduced fat milk
- 1 cup powdered sugar
- 2 oz. reduced fat yogurt cream cheese softened
- 1 tbsp. low fat milk
- 1 tsp. vanilla extract
Preheat oven to 350*. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
In a food processor pulse apples, sugar, lemon juice, cinnamon and salt until apples are finely chopped.
Place in a bowl and stir in cornstarch and applesauce.
In a medium bowl, stir together muffin mix and milk.
Spread evenly on the bottom of the baking dish.
Spread the apple mixture evenly on top.
Bake for 40 to 50 minutes.
Let cool on a wire rack.
In a medium bowl, stir together sugar, and cream cheese. Whisk in 2 tsp. milk and vanilla extract. Add another teaspoon of milk if glaze is too thick. Drizzle over the apple pie bars.
Let sit until glaze hardens.
