Zucchini is probably the vegetable we eat the most in the summer. It may just edge out tomatoes. Zucchini is amazingly versatile. It has become quite popular as a pasta replacement, zoodles are quite the rage. It also adds moisture to baked muffins and cakes without adding fat. You can even enjoy it as a side dish or stuff it for a main meal. You can roast it or grill it. I cannot wait to try the dehydrated zucchini chips. Zucchini is also very economical. It is usually one of our cheapest summer vegetables. Go green and enjoy some zucchini for breakfast, lunch, dinner or even dessert.
