Thursdays Treasures Week 68

Hello again and welcome to Thursdays Treasures.  We are so happy you stopped by.  We love to look at all your treasures and check up on the happenings in your neck of the woods.

Here at Food Done Light, I am trying to stick to some New Years “Goals”.  This week was about eating more Lentils and less meat.  I shared my Butternut Squash Lentils, an Indian dal, with butternut squash and mansoor dal.  I also rolled out some vegetarian recipes to help with our eating less meat.  Fennel, Orange & Pomegranate Salad is a fantastic, winter salad of fresh, shaved fennel, orange segments and pomegranate seeds all lightly dressed with fresh orange juice and a tiny bit of oil.  I also premiered my Roasted Tomato and Fennel Soup.  This is an easy soup to make of roasted tomatoes and fennel pureed in a blender with some vegetable stock.
