When I asked on Facebook what recipes you would most like to see in 2014, it was not a big surprise that it was a slow cooker recipe.  The slow cooker can really save the day and make dinner easy for everyone. Plus I love the bonus of coming home to a house that smells amazing from dinner cooking.  So due to popular demand, the first Food Done Light recipe for 2014 is Slow Cooker Broccoli Cheese Soup with Cauliflower.

My little one is the broccoli cheese soup fanatic in our house.  Whenever we go out to a restaurant that has broccoli cheese soup, she gets it.  I always find restaurant soups too salty and “gloopy”.  I’ve been trying to find a homemade version she likes just as much with little success.  Finally I decided to think outside the box and use grated cauliflower as the creaminess and just a little cheese in the soup.  I gave her a bowl and waited while she tasted it.  “This is good Mommy”.  Yeah, success!

My little one had no idea there was cauliflower in her broccoli cheese soup.  There is no need for her to know.  She just thinks it delicious and I love all the servings of vegetables she is getting.  The added bonus is that I can throw all the ingredients in the slow cooker and be done with it.  I actually haven’t always had a “love affair” with the slow cooker.  It tends to water down food too much so I’ve learned to decrease the liquid and increase the spices.  Adding a touch of fresh herbs or cheese to the top definitely helps.

Slow Cooker Broccoli Cheese Soup with Cauliflower seems like the perfect way to start the New Year.  It’s chock full of vegetables and my little one no longer wants to go out to eat it.  Now if only we would get a decent grocery store that sells a wide variety of organic produce at a decent price.  I have been increasingly disappointed with my local grocery stores produce.  The quality has gone down hill and the variety is non-existent.  I do try to remember that we choose to live out in the middle of “no where”.  There is a rumor that we are getting a Sprouts Grocery Store in a nearby town.  I sure hope that is true.  I am on pins and needles waiting.

This does look tasty. I have never ate or made any broccoli cheese soup.

I have never heard of a Sprouts Store.

Hi Charlotte, It was my little one that really turned me on to Broccoli Cheese Soup. I love how many vegetable servings she gets when she eats it. I had heard of Sprouts either. I really hope they are coming. I’ve sent them an email asking but they never responded.

Hi Bryee, It should easily convert to a dutch oven. I might try an hour on medium low then if it needs more put it on for another hour.

Wow a healthy version of Broccoli Cheese soup! !! Love the idea of the grated cauliflower used as a creamy thickener. Will definitely try this soon. Thanks and Happy New Year Melissa!

That spoon sure is popular. I fell in love with it. I bought it at one of the gift shops at the Biltmore Estates in Asheville.

This is the best soup ever..loved it. All the flavor and not all the salt and goop that is in canned soup..Thank you so much for sharing

Sounds fabulous! Did you use dried minced onion? I plan to double the recipe and don’t have that much minced onion. Do you think I could use fresh onion and if so what quantity? The liquid ratios always throw me off with slow cookers. Thank you!

        • Christie Daruwalla says

Hi Sara, I used a fresh onion that I minced. Liquid is a huge issue with slow cookers. That is why I love to use it to make soup. I hope you enjoy it!

Okay, I had a bag of frozen broccoli and cauliflower that are absolutely disgusting. I hate to waste food so I googled for a recipe to use them up and I landed here.
Just let me say that my husband and I were blown away by how delicious this soup is. I used a garlic/basil stock so that my vegetarian daughter could enjoy it too. You knocked this one out of the park.

I’m too lazy to shred cauliflower so I threw it in whole and used my smart stick hand blender at the end. Delish!

      Hi PJ,

So happy you enjoyed it and thank you so much for letting me know. Love that frozen veggies worked too.
