When I asked on Facebook what recipes you would most like to see in 2014, it was not a big surprise that it was a slow cooker recipe. The slow cooker can really save the day and make dinner easy for everyone. Plus I love the bonus of coming home to a house that smells amazing from dinner cooking. So due to popular demand, the first Food Done Light recipe for 2014 is Slow Cooker Broccoli Cheese Soup with Cauliflower.
My little one is the broccoli cheese soup fanatic in our house. Whenever we go out to a restaurant that has broccoli cheese soup, she gets it. I always find restaurant soups too salty and “gloopy”. I’ve been trying to find a homemade version she likes just as much with little success. Finally I decided to think outside the box and use grated cauliflower as the creaminess and just a little cheese in the soup. I gave her a bowl and waited while she tasted it. “This is good Mommy”. Yeah, success!
My little one had no idea there was cauliflower in her broccoli cheese soup. There is no need for her to know. She just thinks it delicious and I love all the servings of vegetables she is getting. The added bonus is that I can throw all the ingredients in the slow cooker and be done with it. I actually haven’t always had a “love affair” with the slow cooker. It tends to water down food too much so I’ve learned to decrease the liquid and increase the spices. Adding a touch of fresh herbs or cheese to the top definitely helps.
Slow Cooker Broccoli Cheese Soup with Cauliflower seems like the perfect way to start the New Year. It’s chock full of vegetables and my little one no longer wants to go out to eat it. Now if only we would get a decent grocery store that sells a wide variety of organic produce at a decent price. I have been increasingly disappointed with my local grocery stores produce. The quality has gone down hill and the variety is non-existent. I do try to remember that we choose to live out in the middle of “no where”. There is a rumor that we are getting a Sprouts Grocery Store in a nearby town. I sure hope that is true. I am on pins and needles waiting.
- 2 cups shredded cauliflower
- 3 cups chopped broccoli
- 4 cups low sodium vegetable or chicken broth
- 2 cups water
- 2 garlic clove, minced
- 1 cup minced onion
- 1 tsp. kosher salt
- ¼ tsp. fresh ground black pepper
- 1 tsp. dry ground mustard
- 4 oz. reduced fat cream cheese
- ¼ cup shredded reduced fat cheddar cheese
- In a slow cooker, combine cauliflower through mustard. Mix well.
- Cook on high for 1 hour then on low for 3 hours.
- Add cream cheese and cook on low for 30 minutes.
- Serve with shredded cheese on top.
