Roasted Beet and Feta Cheese Stack

Sweet, roasted beets layered with feta and pistachios makes a beautiful vegetarian, side dish.

Is it weird that I have loved beets since I was a little girl?  I adored those pickled beets that came in a jar.  It wasn’t until I was an adult that I started roasting my own.  Now my little one loves them.  While they are not quick to cook, they are easy.  They especially go well with feta cheese and since that is another love of mine, I combined them into Roasted Beet and Feta Cheese Stacks.  If you are lucky enough to find white and purple beets, go for it. I only rarely find the white beets.  While they pretty much taste the same, the different colors make a gorgeous presentation.

This is the type of recipe that fits perfectly into my New Years eating plan.  It relies on good vegetables and is simple with a dash of slightly more indulgent ingredients like feta cheese and pistachios.  This is reminiscent of the way we like to eat.  Now a days, it is really hard to find a recipe that everyone thinks is healthy.  Some people think any carbs are bad, some hate any sugar while others hate sugar substitutes, some think any amount of “good fat” is fine while others think everything should be low-fat.  We tend to eat in moderation.  That is what works best for us.  A large part of eating healthy is finding what works best for you.  Don’t let others dictate what works best for you.  Every one has different dietary needs and it is up to you and your doctor to decide what that is.

For us this year, our focus again will be very limited processed food.  I am human though and on occasion I need a little time-saving from a store-bought ingredient.   For Valentine’s Day, I’ve got a Strawberry Cake Donut recipe made with a boxed cake mix and fresh fruit.  It is so delicious.  You will see some healthy appetizers for Superbowl including chicken wings.  There will be fresh vegetable recipes, slow cooker recipes, meatless recipes and of course some sweet recipes.  You’ll have to wait for February for those.  I decided to concentrate on core healthy recipes in January.  I think we could all use a little detox from cookies and cakes after this year.

Roasted Beet and Feta Cheese Stack

Prep Time: 5 minutes

Cook Time: 1 hour, 30 minutes

Total Time: 1 hour, 40 minutes

Yield: 6 servings

Ingredients

  • 2 lbs. whole, raw beets, greens removed.
  • ½ cup (2 oz.) fat-free or reduced fat feta Cheese
  • ¼ cup chopped pistachio nuts, no salt added
  • 1 tsp. honey
  • 1/8 tsp. fresh ground black pepper
  • Lemon Vinaigrette
  • 3 tbsp. balsamic vinegar
  • 1 tbsp. oil
  • 2 tbsp. water
  • ½ tsp. kosher salt
  • 1/8 tsp. fresh ground black pepper

Instructions

  1. Preheat oven to 450°.
  2. Wash beets and wrap in foil. Place foil packet on a baking sheet and bake for 1 to 1 ½ hours. Beets are done when a fork will easily go through beets.
  3. Let cool enough to handle. Take a paper towel and wipe off the skin.
  4. Slice Beets into thick slices.
  5. In a small bowl, mix together feta, pistachios, honey and black pepper.
  6. Layer beets with a smear of the feta mixture.
  7. In another small bowl, whisk together all ingredients for vinaigrette.
  8. Drizzle over beets.

    I hear you, it’s way too hard to keep up with what everyone else’s idea of healthy is, plus people get WAY too angry about the simplest things that OTHER people are eating. I’m super excited for this recipe, though! It’s similar to a salad my mom got on Mother’s day last year and I’ve been hoping to make it at home.
