Sweet & Spicy - the perfect healthy dip - Blueberry Chipotle Dip #healthysnack #healthydip #yogurtdipI love when a recipe happens by accident.  That’s what happened with this dip, Blueberry Chipotle Dip.  I was making a marinade for fish tacos with some Fage 0% fat blueberry Greek yogurt.  I really wanted to play around with the sweet and spicy flavors and had added some chipotle in adobo sauce.  My husband happened to come in and tasted the marinade.  He loved it and wanted to eat it as a dip. He went in for another bite.  He is always grabbing a piece of this or that while I’m cooking.  Drives me crazy but Lightbulb moment!  I tasted it.  He was right; it was fantastic.  So I marinated the fish in it and made a new batch the next day to use as a dip.

Yum, yum, yum!  This dip tastes great with veggies or chips.  I love to keep dips in the frig.  Whenever I get “snacky”, I can take a couple of tablespoons of dip and vegetables and get another serving of veggies in.  It is a life saver for me about 4pm.  Oh man, is that a hungry time for me.  I just want to snack on anything.  If I don’t have something healthy readily available than anything will do.  It is the kiss of death for my diet.

My hubby has asked me to make this dip so many times since then.  I love that we both enjoy food.  He is actually a fabulous cook but doesn’t have much time for it now.  He makes incredible chicken satay and scrambled eggs.  Our daughter actually prefers his “cheesy eggs” to mine.  She will bat her little eye lashes at him and ask for her Daddy to make her some cheesy eggs.  You can just see her winding him around her little finger.  As quick as a flash, he is in the kitchen making her scrambled eggs with cheese. (and leaving lots of dishes for me to do in his wake)

I have two serious food critics in the house.  They love to give me advice on something I made or throw ideas around to change it.  Last night I made some slow cooker Moo Shu Chicken wraps.  We were talking about how good they are and she says the chicken would make fantastic tacos.  Oh yes sir-e-bob!  They would make fantastic tacos.  You will definitely be seeing that recipe sometime in the future.  Stay tuned…

Blueberry Chipotle Dip

  • 1 (5.3oz) Fage 0% blueberry Greek yogurt
  • ½ cup chopped cilantro
  • 2 tsp. ground chili powder
  • 2 tsp. ground cumin
  • Zest of lemon
  • 1 tbsp. olive oil
  • 2 tsp. chipotle in adobo
  • 4 garlic cloves, minced
  • ¾ tsp. kosher salt
  1. Puree all ingredients in a food processor.
  2. Refrigerate for a few hours to let the flavors come together.
  3. Serve with veggies or chips.

    I made it according to above, measured everything then blended. It came out brown and over powered by the Chili Powder, TWO TEASPOONS correct? I then added another container of yogurt and it still was off. I thought that amount for only 5.3 oz was a lot, even double the yogurt.
    I like the idea of the combination and will try less amounts of Cumin and Chili Powder next time

      Hi Dan, I’m sorry that this did not turn out for you. I made it a few months ago again and it was fine. I’ll pick up the ingredients early next week and try it again and see if I can match your results. It could be a difference in types of chili powder. I recently tried some I didn’t like and went back to my old brand. I’ll let you know if I get different results next week.
